i have a pid’d silvia set to 228 and the pressure mod. i still cannot seem to do a ristretto (although i am still just getting started). Should i just keep making my grinds finer and finner until it drips very slowly… using a mazzer super jolly grinder. thank you -c
Are you using coffee with a roast date of less than 3 weeks old? Dose and tamp with around 30lb force so that the packed coffee is just above the filter basket spring groove. The adjust grinder fineness until you get around 2 ounces of espresso in around 25 – 30 seconds. Then, for a ristretto, cut off the pour after about 15 to 20 seconds.
